Breakfast Ideas

I love food, and I especially love my breakfasts. Some people have no breakfast, and their first meal is lunch, others start their day with a green smoothie. I recommend speaking to a dietician or a professional to get more advice on breakfast and food in general. But I believe we should all start the day with some breakfast, and it should consist of a balance of carbs, protein and good fats.

If I’m in a rush or just don’t feel like breakfast, I will have a coffee with a dollop of organic coconut cream. Being in a rush in the mornings is often the reason people skip breakfast. That’s why I thought I’d share my two favourite, quick and easy breakfasts with you. First, I love two slices of protein toast with peanut butter and cottage cheese – yummy. Second, Overnight oats which you can prepare the night before so that it’s ready to grab and go in the morning.  

Overnight Oats

Serves: 1

Ingredients:

  • 1 tbs chia seeds
  • 1/3 cup rolled oats
  • 3/4 cup unsweetened almond milk
  • 1 tsp honey
  • 1/2 tsp vanilla extract
  • 2 tbs chopped pecans
  • Mixed berries to top
  • Shredded coconut to top

TIP:  Replacing the honey, vanilla and pecans with a scoop of protein powder will decrease the calories and carbs, and increase the protein. You can also replace the oats with quinoa.
